Pädaste Manor: Dinner #1
I spent two nights at Pädaste Manor -- and had dinner there both nights at Restaurant Alexander.
At the restaurant, only seasonal ingredients are used -- and they are primarily sourced from farmers on Muhu Island or from the hotel's own garden.
First night was the tasting menu with wine pairing. The food was fantastic, as were the wines! And fortunately my room was only 25 feet from the dining room ☺.

- #1: Crunchy flatbreads with herb butter
|

- #1: Potato & Kilu
- fried potato, dill, fish
- kilu = Baltic sprat (a small fish similar to the European sprat)
- #3: Kala = fish
- air-dried flounder with tomato jam
- very delicious - although I had to ask about how to eat it

- tartar of ostrich with flowers from the garden
- very good, from a farm right down the road

- #1: Jätku Leiba translates to "bon appetit"
- homemade sourdough bread with salted butter (on the left) & curd cheese mixed with honey (on the right)
- the curd cheese was similar to ricotta cheese -- and mixed with the honey -- out of this world delicious!
- #2: Homemade honey (picture is from the next morning's breakfast)
- just fantastic, I brought a jar home with me

- sous-vide egg with basil pea foam

- three kinds of tomatoes with dill oil and basil sorbet

- lamb cheeks / lamb fillet with beets and kale
- just fantastic (and also from a local farm)
- #3: Raspberry wine from a local producer

- #1: Kohuke (mentioned in previous post -- this version is obviously homemade!)
- ricotta-filled Madagascar chocolate
- just now realizing that it's topped with dried ants! (according to the internet - they are from the local forest)

- #3: Homemade petit four, butter madeleine, caramel and white chocolate with red currants
